Happy April Fools Day. Is this a Joke? Gluten-Free Deep-Fried Fish with Root Beer & Pancake Mix!

Apparently, when I first posted this last month, lots of readers thought it was a joke. So….today is April Fools Day – and I’m compelled to re-post this recipe because it’s NO JOKE!!! So, the family wanted fish tacos. Usually, I’d just follow my simple recipe HERE:

Of course I had our Gluten-Free Prairie Pancake Mix

but, I didn’t have any Gluten-Free beer.

I found this local (gluten-free) root beer in my fridge and I thought, well…it has bubbles and “beer” is the name.

So, why not? What could go wrong? I followed my recipe using our Pancake Mix & the root beer. The tacos were amazing. The batter was crisp and nicely sweet. Another Happy Accident! We all agree that these are the best fish tacos we’ve ever had. If you try this recipe, I’d love it if you let me know how it turned out for you.
