Deb’s Spring Favorites

Snow-covered furrows in a plowed field under a cloudy sky. It’s that time of year when the ground is thawing out the the farmers ready the fields for their Spring planting. Then it begins: Winter and Spring do a dance – like a pair of mating Montana Sage Grouse – ending with a truce that will last bless us with – hopefully at least 6 months of Beautiful Big Sky weather.Dramatic cloudy sky over a green field with a rustic wooden fence. And it’s during this time that I start thinking about lighter fare for dinner. And on-the-go snacks during a sunset trail ride. The possibilities for great food are always endless. And I specifically enjoy new discoveries to add to my arsenal of Spring cooking and baking.

And as the days are getting longer and that means more time for riding after our Bakery work. Longer days also means I can do a better job at meal-planning.

Here are a few of my Spring Favorites:

Freshly baked biscuits in a cast iron skillet on a stove.

Buttery Skillet Biscuits

Gluten-Free Coconut Shrimp (Coc-Oat-Nut Shrimp)

A stack of homemade muffins beside pink flowers.

Gluten-Free Lemon Blueberry Fluffy Muffins

Cheesy Oat Groat Patties
