Crazy Breakfast
 
 
One of our favorites here in Montana. Crazy Breakfast comes together quickly. Packed with protein, fiber and B-vitamins, it covers all the bases needed for a busy day.

Ingredients
  • ½ cup GFP cooked oat groats, (make ahead and keep in fridge)
  • 2-3 cups fresh baby kale -and/or baby spinach and arugula
  • 3 eggs (egg whites, or egg replacement)
  • cherry tomatoes – cut in half
  • Black lentils - Optional
  • 1 teaspoon cooking oil of choice
  • salt and pepper to taste
  • Hot sauce of choice (optional) We love Lizano (Costa Rican veggie hot sauce
Instructions
  1. Heat pan. (I love my Lodge Cast Iron for this) Then add oil and sauté greens until soft (set aside)
  2. In another pan: Cook beaten eggs to desired texture
  3. Add tomatoes to greens and heat through – until tomatoes start to soften
  4. Sprinkle cooked groats and lentils over greens
  5. Drizzle with hot sauce (optional)
  6. Enjoy!
